Prep Time 5 minutes
Total Time 5 minutes
Servings: 1 drink (about 230 ml), in a large wine glass or highball
Course: Drinks
Cuisine: British

Ingredients

  • Ice
  • 60 ml cranberry juice, chilled: ideally your own cold-pressed; otherwise organic pressed 100% cranberry juice, not from concentrate, with no added sugar or sweeteners
  • 20–25 ml rosemary syrup (made with honey or agave), to taste
  • 15 ml freshly squeezed lime juice
  • 120 ml chilled sparkling water or soda water
  • 1 small sprig fresh rosemary and 3–4 fresh cranberries, to garnish

Equipment

  • Jigger or measuring spoons
  • Bar spoon
  • Large wine glasses or highballs
  • A glass jug, if you're making it for a crowd

Method

  1. Fill a large wine glass or highball with ice.
  2. Add the cranberry juice, rosemary syrup and lime juice, then stir for a few seconds with a bar spoon.
  3. Taste and add a little more syrup if your cranberry juice is very sharp.
  4. Top with the sparkling water and give one gentle lift with the spoon to mix without losing the bubbles.
  5. Lightly slap the rosemary sprig between your palms to release its aroma, then add it to the glass with the cranberries.

Notes

Juice: ideally press your own cranberry juice (a juicer handles fresh or defrosted cranberries). Otherwise choose organic pressed 100% cranberry juice, not from concentrate, with no added sugar or sweeteners. Most cartons labelled 'cranberry juice drink' contain added sugar, so check the label.
Pure cranberry juice is very tart. The rosemary syrup balances it; sweeten to taste.
No rosemary syrup? Use our honey syrup and add the rosemary sprig as a garnish only.
Honey is not suitable for babies under 12 months. Make the rosemary syrup with agave for a vegan drink.
Total time doesn't include making the rosemary syrup (about 30 minutes plus cooling).
